For meal prep today, I will make ahead breakfast and lunches. All recipes can be found on my Pinterest page by meal category. I will fix ham cups and sausage crescents for breakfast and varying salads for lunch, all stored in air tight containers in the fridge. Breakfast and lunch recipes at are the bottom of the page. I always top my salads with my homemade pico so that not much dressing is needed. This week’s dinner menu is as follows to accommodate our schedules:
Monday- Chicken Enchilada Casserole with beans and rice.
Tuesday- White Trash Sliders with fries.
Wednesday-Out
Thursday- Enchilada Pasta
Lunch-
Day 1 and 3- Ice berg Salad mix topped with taco meat and pico.
***I make my own taco seasoning with a bit of garlic, lots of cumin and salt and pepper. Pico recipe is below. I top my lettuce with meat and the pico and store in an airtight container. Leave the dressing off until your ready to eat or it gets soggy!
Day 2- Ice berg Salad mix topped with grilled chicken and pico.
***I buy grilled chicken from the ready made cold section at Costco…its delicious! I top my lettuce with meat and the pico and store in an airtight container. Leave the dressing off until your ready to eat or it gets soggy! I often combine this same chicken with spinach leaves instead and top with Vidalia Onion dressing…super yummy!
Day 4-Ham and Cheese Sandwich.
*** By day 4 I am sick of salads, a simple ham and cheese sandwich with mayo, pico and lettuce does the trick! If I have them I will add a few slices of bell pepper too!
We go to Mexico in the summer time and have gotten spoiled to the Pico recipe. It’s always fresh and most don’t use any extra spices. This recipe can be doubled or tripled according to what you need. It’s super simple and very tasty!
Pico Recipe-
4 tomatoes
Half of Purple Onion
1 Jalepeno
Cilantro to taste (I love it so use a lot!)
Combine all chopped ingredients and store in a air tight container for up to 5 days.
Breakfast-
Day 1 and 3- Ham Egg and Cheese cups with your choice of add ins.
Day 2 and 4- Sausage Crescents
